Beef Jerky and Eggs

Authentic Mexican

Take 2 ounces of Beef Jerky and put under broiler (4 inches) for 1 to 3 minutes until it starts to bubble.
Put in blender and pulse until shredded

Dice a medium onion and fry in lard or oil until it starts to brown, then add the shredded jerkey

and fry until the jerky browns some, but don't burn it

Add
a medium diced tomato and a large pasilla (aka poblano depending on
where you live) which has been roasted to remove the skin and diced.
Stir fry for a couple of minutes.

Add six eggs that have been barely beaten with some salt

Let it set and then scramble

We
like to serve it with refried beans and a side salad of lettuce
and sliced avocado hit with walnut oil and cider vinegar. Add a few
corn tortillas.



It might not be the prettiest scrambled eggs but it sure is tasty!
